It's strawberry season! Whether you pick your own (highly recommended) or you buy fresh local berries at the market, may I suggest Strawberry & Cream Roll-Up Cake as a treat.
But first let us eat strawberries!
Strawberry picking is easy and fun. As you make your approach to a strawberry field, the smell is amazing. There is nothing like the taste of a freshly picked, ripe, sweet strawberry.
OK now that the picking and eating is out of the way, let's make that dreamy, balanced fresh Strawberry & Cream Roll-Up Cake.
It's a super easy cake to make. It's light and fluffy and not too sweet. I use a rimmed cookie sheet lined with parchment paper. It's the perfect size for a roll-up cake.
Rolling the cake in a clean dish towel works really well. Once the cake has cooled you can add your whipped cream and berries, and roll it up again. Cover in plastic wrap and refrigerate until ready to serve. It will hold it's shape really well.

*Homemade Strawberry Jam & Coulis - this is a simple and worthwhile extra step. Simply cut up 2 cups of strawberries put into a pot with 1/2 cup sugar and 1/4 cup water. Boil until strawberries breakdown. Drain the strawberry mixture over a colander and set the juice aside for drizzling over the cake. Once the jam has cooled spread it over the cake.
