We've moved from Ottawa, Ontario, Canada to White River, South Africa. One of our South African colleagues had a birthday and I heard her favourite dessert was "Milk Tart". Milk what? It sure didn't sound very appealing to me. I couldn't imagine any tart that involved milk as its main ingredient could be very interesting or tasty. Well I'm happy to report, I was wrong. Very, very wrong! According to Susannah Brinkley: A pie of Cape Dutch origin, melktert literally translates to ‘milk tart’. It’s a bit like a custard tart, but with a different consistency. Milk tarts are luscious and creamy, and the best ones are topped with a sprinkling of cinnamon. I searched for and read over at least a dozen or so recipes before settling on two very similar recipes to use as my first "kick at the can". Though the recipes were similar, one included "baking powder" in the crust. A small amount of baking powder is like magic in crust. The other recipe provided a nicely balanced filling.
