Anytime is a good time for Thai. You can't beat Thai for fullness in flavour. So when I came across this Thai Cashew Coconut Rice recipe on Pinterest, I did a quick assessment of the ingredients I had on hand. I didn't have everything the original recipe called for but I was willing to improvise. I'm so glad I did. We ate this dish as a main course and it was delicious!

Beginnings don't need to be too complicated. When my 7 year old daughter, Samara asked to make Banana Chocolate Chip Muffins, it was the perfect opportunity to take my first stab at food blogging. Sometimes it's the simplest things in life that are the best. These muffins are easy to make and incredibly yummy. Ripe bananas are always welcome in our home. This morning I simply offered guidance (and took pictures) as Samara measured, poured, mixed, filled and baked her muffins. They turned out perfect! She's a little lady after my own heart. The recipe comes from Company's Coming, Muffins & More.
Mellow banana flavour.
1 3/4 cups All-purpose flour
1 tsp Baking Soda
1/4 tsp Salt
1/2 cup Butter or margarine, softened
1 1/4 cups Granulated sugar (I usually use 1 cup, seems to be fine)
1/4 cup Sour cream
1 cup Mashed bananas (3 medium) 2 bananas also work well
1 1/4 cups Chocolate chips (not in original recipe, but a scrumptious addition)
Put flour, soda and salt in large bowl. Stir. Make a well in center.
In another bowl cream butter, sugar and one egg. Beat in second egg. Mix in sour cream and mashed bananas. Pour into well and stir to mix. Ignore lumps. If using chocolate chips, add and mix. Fill greased (or paper lined) cups 3/4 full. Bake in 400 F (200 C) oven for 20 to 25 minutes (I have a convection oven and find the muffins are cooked within 15 -17 minutes). Yield: 16 muffins (we usually spread the batter over 18 muffin cups).
