You'll spend a little time chopping but it's well worth it. Just chop and throw everything into a bowl, drizzle with lime juice, mix and refrigerate.

BBQ Chicken and Mango Quesadillas
INGREDIENTS (serves 3)
Clean Mango Black Bean Salad
1 medium mango
chopped 1 medium avocado
chopped 2 tomatoes
chopped 1 large red bell pepper
chopped 12oz can corn (or fresh corn lightly sauteed for 5 min)
drained 15oz can black beans rinsed and drained
1/4 cup red onion finely diced (optional)
1/2 cup cilantro finely chopped
1 lime, juice of
Pinch of salt
In a large bowl, add all ingredients and gently mix to combine. Serve cold.
Easy to prepare and usually tastes like, "more please". This no bake peanut butter pie is a family favourite. The Food Network offers us up a great starting point for this delicious pie. My dad's allergic to chocolate so I always serve up his piece first and then "generously" drizzle chocolate on top for everyone else.
Who can refuse chocolate and peanut butter?
Creamy Peanut Butter Pie
1 1⁄2cups crushed graham crackers
1⁄4cup sugar (optional, personally I never add the sugar)
5 tablespoons melted butter
1 cup creamy peanut butter
One 8-ounce package cream cheese, softened
1 1/4 cups powdered sugar
One 8-ounce package whipped topping, such as Cool Whip, thawed (you could use whipping cream as a substitute)
3 square semi-sweet chocolate (or half a cup semi-sweet chocolate chips)
1 tbsp butter
For the crust: Preheat the oven to 350 degrees F. Mix the graham crackers and sugar, then add butter and mix with a fork until completely moistened. Press mixture into the bottom and up 1/3rd of the side of a 9-inch springform pan. Refrigerate for 1 hour.
For the filling: Beat the peanut butter with the cream cheese until smooth. Add the powdered sugar and beat until smooth. Add in the thawed whipped topping and beat until smooth, scraping the sides as needed.
Pour the filling into the crust, evening out the top with a knife or spatula. Chill for at least an hour before serving.
Melt the semi-sweet chocolate with the butter in microwave or on stove top until just melted (remove from heat and continue to stir until chocolate has completely melted). Stir until smooth. Drizzle over top of sliced pie. Be generous!
Optional Chocolate Crust:
If you don't have any chocolate allergies you may want to prepare this pie with a "chocolate crust"
25 whole chocolate sandwich cookies, such as Oreos
4 tablespoons butter, melted

Note: If you don't feel pasta will be sufficient, steak is a wonderful accompaniment.
