I've been following Newfoundland Sausage Company for about a year on Insta. Their tagline is "honest meat", and now that I've finally tried it, yep, it's honest and delicious meat!
At the moment, I'm visiting my daughter, Mariah and her spouse, Caleb, in Newfoundland. We're all anxiously awaiting the birth of their first child. Oh I can't wait!
Since I'm in isolation for 14 days (Covid), Mariah picked up a package of loose Chorizo which I knew would be perfect for a pasta dish. I hit up Pinterest and found a simple yet perfect pasta recipe to highlight the loose chorizo.
The recipe is simple and suggests it's an easy weeknight meal. While absolutely true, I'd recommend saving it for a weekend treat.
eThe smell and the visual are equally wonderful. The recipe calls for chicken, and I really love the addition of it, however, it's not really necessary if you wish to skip that step. My daughter said she would prefer it without the chicken. She didn't love having two meats in the dish. I on the other hand thought the chicken was a great addition. It was tender and juicy and added a nice element.
I tripled up on the garlic, cause you can never have too much garlic. I doubled the recipe which provided the three of us with a large portion, two nights in a row. YES! Chorizo & Chicken Penne
