Anytime is a good time for Thai. You can't beat Thai for fullness in flavour. So when I came across this Thai Cashew Coconut Rice recipe on Pinterest, I did a quick assessment of the ingredients I had on hand. I didn't have everything the original recipe called for but I was willing to improvise. I'm so glad I did. We ate this dish as a main course and it was delicious!
