My husband Jeff has been whipping up nachos for a few years now. They just seem to get better and better. If you have a rotisserie chicken and don't know what to do with the leftovers, problem solved: Jeff's Sweet Chicken Nachos. It's what he does with the chicken that takes it over the top.
Sweet Chicken Nachos
Ingredients
1 Bag of Restaurant Style Nacho Chips 2 cups of Shredded Cheddar Cheese (or whatever cheese you prefer) 2 cups cooked and diced or pulled chicken (leftover rotisserie works really well) 1/4 cup Maple Syrup (don't skimp, use the real thing) 1-2 green onions sliced 1 cup diced red pepper 1 diced jalapeno (less or more to your liking) 3-4 slices of crisp bacon crumbled (optional) Suggested Additional Toppings Gaucamole Sour Cream Salsa Hot Sauce Instructions Line a cookie sheet with tinfoil and spread large bag of nacho chips over the base. Dice cooked chicken and place in a bowl. Pour Maple Syrup over the chicken and let it sit while you prepare remaining ingredients. Slice your green onion, dice your red pepper, finely dice your jalapeno. Shred 2 cups of cheese. Spread diced chicken evenly over the base of nacho chips. Layer the nachos with the green onion, red pepper, and jalapeno. Finish with spreading the cheese evenly over top. Broil nachos until the cheese has melted. Serve up your Sweet Chicken Nachos with a variety of additional toppings: Guacamole, Sour Cream, Salsa, Hot Sauce and anything else you might like.
