Rhubarb growing in the backyard was all the excuse I needed to bake up this easy and delicious cake. I love the tartness of rhubarb that comes through the sweet caramel notes produced by the brown sugar and butter mixture.
Once you have the chopped rhubarb evenly layered over the brown sugar sauce, you're ready to mix up your batter and pour it on top.
Once your cake is out of the oven, invert it onto a plate and serve it up with some ice cream or whipped cream; your preference. Dig into a soft, sweet cake with a hint of tartness.
