It must be good when your daughter asks you to make it for her 10th birthday party. It's far from a traditional birthday cake but hey, if it makes her smile, that's all that matters. There are lots of recipes for no bake cheesecake and I've tried a few but none compare to Jean Paré's version from her Company's Coming Desserts cookbook. To my surprise I searched but couldn't find the recipe on Pinterest. Well it's there now and I encourage you to try it. So easy and so good.
Prepare your crust and then whip your Dream Whip and set aside until you've mixed your cream cheese. Then fold Dream Whip into your cream cheese mixture.
You can use canned topping, but it's so easy to make your own berry topping of choice and tastes so much better. My daughter wanted blueberry but you can easily substitute raspberries or blackberries which are equally as delicious.
To make your topping simply add all ingredients to your pot and let the heat do the work. You'll need to stir it occasionally. The heat will break down blueberries and the liquid will eventually turn a nice shiny blue and the topping will thicken. It takes about 15 minutes from start to finish. You can let the sauce cool a little before putting it on top of your cheesecake, if you like.
Cover with saran wrap and pop it into the fridge. It should sit a couple of hours before eating, overnight is great too.
No Bake Blueberry Cheesecake Recipe

Ingredients
CRUST: 1/2 cup margarine (or butter) 1-1/2 cups graham crumbs FILLING: 8oz. softened cream cheese 1 cup sugar 1 tbsp. lemon juice (fresh or Realemon) 1 envelope of topping (pkg. of Dream Whip) 1/2 cup milk (for the Dream Whip) BLUEBERRY TOPPING: 1 ½ cups blueberries ½ cup sugar ½ cup water 1 tbsp corn starch Directions: CRUST: Melt margarine (butter) and mix with graham crumbs. Press into pie plate, or 8 inch square pan. Bake in oven at 350°F for 10 minutes. Cool. *Or don't bake at all, I prefer this. FILLING: Whip the topping with milk according to pkg. directions. Set aside until cream cheese mixture is done. Beat cream cheese, sugar and lemon together very well to dissolve the sugar. Fold Dream Whip into the cheese mixture and spread over the cooled crust. BLUEBERRY TOPPING: Put all ingredients into a pot and heat on medium. Bring to a boil and remove from heat. Allow it to cool. Spread blueberry topping over the top of cheesecake cake. Chill.

Thank you I have been looking for this recipe, Jean pare taught me how to cook.,! My kids grew up on her recipes. I thought it used cool whip have you ever substituted cool whip for dream whip ?
