When in Georgia, stop for peaches. The best peaches I've ever tasted have come from Georgia. They ripen to perfection. The skin easily peels off and the pit can be removed with little struggle. When you come across fruit that's in season you might want to try your hand at a fresh pie, as opposed to a cooked pie. While it will have to be eaten the day it's made, the upside is that is has very little sugar in comparison to a cooked pie. But the taste is what will really blow you away.
While passing through Georgia en route to Florida we saw a sign for pecans, another Georgia delicacy. We pulled off the road and headed down a beautiful country road ending up at Ellis Bros Pecans. Thankfully it was open and we just happened to be their first customers that day. We did end up with some lovely pecans but discovered they also carried Georgia peaches as well. We filled a bag to nearly overflowing and hit the road for the last leg of our journey to Anna Maria Island, Florida.
Prepare your "binding' sauce first so that it has time to cool while you prepare the peaches for the filling. You can either mix the peaches into the sauce and pour into pie shell, or arrange peaches in pie shell and cover with sauce. Both methods seem to work. Make sure your sauce has a good thickness to it. It needs to be the consistency of a thick jam in order to hold the peaches together.
