This piccata is a no fail dish that is guaranteed to dazzle every palate. Every time I've made this dish it comes out a winner. The chicken will practically melt in your mouth and the combination of the garlic, lemon, parmesan and zing from the capers leaves you wanting more. The creamy twist on this piccata produces a subtle lemon flavour. It's absolutely divine over spaghettini.
I would rate this an easy dish to prepare. It does involve a few steps along the way but if you get things prepared in advance it will come together nicely. The steps aren't complicated and are worth the effort. I slice my chicken breasts in half or butterfly them before pounding them with a meat mallet. I throw together a mixture of flour, freshly grated parmesan, salt and pepper and then lightly dredge my chicken in it. I don't find it necessary to dip the chicken in any liquid prior to flouring them.
Are you hungry yet? This is probably more of a weekend dish, so plan to make it this weekend. You won't be disappointed. It will end up on your "most requested" list.
