Cranberries aren't always readily available but when they are take advantage of this versatile fruit. Cranberries seem to land in the camp of either like or dislike, but it doesn't have to be that way. The traditional cranberry sauce isn't all that inspiring but don't overlook the fruit, it's got a lot to offer. The colour is incredibly vibrant and the flavour when mixed with other complimentary foods can be absolutely delicious. I proudly announced to my dinner guests we were having a cranberry themed dinner. Little did I know there was at least one person who disliked cranberries. Thankfully she decided not to say anything until after dinner. She told me she had always passed over the cranberries until tonight. She said she enjoyed every unique cranberry inspired dish. Woohoo a cranberry convert, yeah! Cranberries from appetizer through to dessert...Thanks once again to cooks who are inspired and who pin to Pinterest. Here's what I served. Appetizer: Pomegranate and Cranberry Bruschetta (Definitely making this again soon!) Main: Cranberry-Raspberry Sauce for Pork Tenderloin Dessert: Pie anyone? Not one but two... Pie #1: Cranberry Custard Pie topped with Sparkling Sugared Cranberries Pie #2: Cranberry Meringue Pie Working with cranberries is so much fun, they're versatile and they definitely help put you in the Christmas mood. Don't write off cranberries, try one of the recipes above. You just might become a cranberry convert too!
