So my daughter went shopping with her dad and asked to buy a coconut. They came home opened it up, discarded most of the liquid (say what) and then cut it up. A good idea? Hmm, not so much. My daughter decided she didn't care for it and wasn't going to eat it. Thus, fresh coconut in the fridge was the inspiration for this cake. Something about coconut and Easter marry well in my mind, so it was the perfect time for this sweet creation.
I've always loved blueberries and have really enjoyed picking them over the years. Picking blueberries in the Ottawa region generally means, paying for the experience to pick cultivated blueberries. Not a bad thing, as they are big and sweet and easy to pick. But there's just something about the wild blueberry that has always captivated my interest.
My girlfriend and I used to spend hours picking "wild blueberries" from a patch that Hugli's Blueberry Ranch used to have. Even though we could have gathered buckets of their amazing cultivated blueberries, there was something about that little tiny blueberry that we just couldn't resist.
ItMy parents came for a visit and brought a big bag of peaches with them. My mom knows how much my husband, Jeff loves peach pie and she wanted to make him a home baked peach pie while visiting.
There were enough peaches for one traditional double crust pie, or we could change it up and make Peaches & Cream Pie which would allow us to make two pies - one for us, and one for my neighbour. It's always nice to share homemade pie. So mom and I set to work to make pies. It was fun making the pies together. Mom made the crusts and I peeled the peaches. The peaches were absolute perfection. Perfectly ripe.
It was my eldest daughter's birthday and because she loves cheesecake and peanut butter cups, I thought this would be the perfect pairing. This is a little lighter than a baked cheesecake and the hot fudge sauce (optional) took it to another level. Everyone LOVED this dessert. You will too!
I would class this dessert as fairly easy and asked my youngest daughter (11) if she wanted to make it. She took on the challenge and did most of it on her own. I guided and helped a little, but she definitely did the bulk of it on her own.
It's strawberry season! Whether you pick your own (highly recommended) or you buy fresh local berries at the market, may I suggest Strawberry & Cream Roll-Up Cake as a treat.

Strawberry picking is easy and fun. As you make your approach to a strawberry field, the smell is amazing. There is nothing like the taste of a freshly picked, ripe, sweet strawberry.
End of school potluck is what inspired these yummy treats. What kid, or adult for that matter, doesn't love a good s'more? Rhetorical question, of course.
My daughter's teacher decided to have a class potluck and my daughter wanted to bring a sweet treat that she could "mostly" make herself. Pinterest to the rescue, again! Of course there were a ton of "s'more bars" recipes to choose from, but it's all about finding the best one. This one did not disappoint!
One of the benefits of living in Mennonite country (aka Listowel, ON) is plentiful produce. As I was driving home the other day there were a number of roadside buckets of freshly picked rhubarb. I couldn't resist pulling over to get some. Large bright red stalks of rhubarb were being offered for only $2.00 a bundle. Incredible!
With my eldest daughter's help we produced ten homemade pies on a Friday night. Earlier that day my daughter texted me and said, "hey any chance we could make pies tonight, like five apple and five lemon meringue, LOL?" She really did add the LOL but she wasn't joking.
She wanted to celebrate her boyfriend's birthday by gifting him his favourite pie(s). OK, but ten of them?! It just so happens he's in a program right now and it wouldn't go over to drop a pie off for just him and not the rest of the guys, so ten pies it would be!
With our big Christmas meal planned for boxing day this year, it meant I could do a little something extra special for Christmas morning breakfast.
Is there anything better than warm and gooey cinnamon buns? Following an amazing egg and ham casserole, I pulled the cinnamon buns out of the oven for all to indulge. Yes they take a bit of time to pull off, mainly for the dough to rise, but they are so worth it. I was able to prepare them a day ahead and just pop them into the oven, lightly covered with tinfoil on low (325 degrees) for about 30 minutes. |
